i just had a great discovery: last night, i roasted a head of garlic for dinner, but then my sister-in-law invited me over to eat, so i put the roasted garlic bulb in the fridge. this afternoon, while making my salad, i decided to just peel the garlic and stick it in the salad. it was awesome--because it was cool, it was super-easy to get the cloves out whole, and it was quite tasty in the salad! and oddly enough, i've haven't burped garlic and have just the faintest aftertaste, as opposed to smelling my self through-and-through when i eat roasted garlic cloves.

there is a restaurant here that offers roasted garlic on their pizzas. i always have it added to my salad ... and i have the garlic dressing!

Mon, August 7, 2006 - 9:28 AMafter posting this, i decided to just go ahead and roast a few bulbs and store them in the fridge. so now there's roasted garlic ready and waiting! i gave some cold roasted garlic to my husband as a side dish, and he also noted that he did not have any unpleasant aftereffects like he usually does with warm roasted garlic.
