Wed, June 29, 2005 - 9:05 AMMy favorite is to chop, oh, about 2/3rd of a head of garlic, and about a fourth of an onion, and sautee them with some olive oil, and then at the last minute add some finely slivered red chard (about a half a pound) and let the garlic olive oil and onions coat and warm the chard.
Then I toast some bread and smear it with brie (or any other soft cheese, I just happen to be partial to brie) and then top it off with a couple of spoonfuls of the chard mixture. It just melts the cheese, and soaks into the bread-and it's super super super yummy!

5 heads garlic
7 oz. salt pork
3 eggs
12 saffron threads
5 oz. cream cheese
6 oz. farmers cheese
1 t. cinnamon
1 t. pepper
1/4 t. cloves
1/4 t. nutmeg
1/4 t. ginger
1/2 C. raisins
crust for a 2-crust pie
Separate the garlic cloves and peel. Bring a pot of
water to boil. Add garlic and simmer for 15 minutes.
Drain and place garlic in a bowl of cold water.
Grind the salt pork or chop very fine.
Beat the eggs lightly and add the saffron threads.
Add the cream cheese and beat until fairly smooth.
Grate or finely dice the farmers cheese. Add to
the egg mixture along with the salt pork, raisins
and spices.
Mash the garlic cloves with mortar and pestle or
in a food processor. Add to the egg mixture and
blend thoroughly.
Line a 9" pie pan with crust. Pour in the filling,
and top with the second crust - sealing tightly.
Heat oven to 400 degrees and bake for 45 minutes.

Mon, October 17, 2005 - 8:24 PMA good pesto is hard to beat. Fresh basil from the garden, pine nuts, parmesean, olive oil, and don't be shy with the garlic. It's like foreplay on a plate. -

BTW there are all sort of crazy variants to pesto, some of which aren't bad. Two you will see in Italy are using walnuts or almonds instead of pine nuts and using other fresh herbs such as parsley for all or part of the basil.

Tue, October 18, 2005 - 4:07 PMFor a quick cure for the Munchies, I heat some Virgin Olive Oil, and chopped Garlic in a fry pan and then when the mix is right I add either Locatelli Romano or Asaigo cheese. Then dip my favorite Sourdough roll and sit back and enjoy.
BTW when making Hamburgers I use Chopped Garlic and Locatelli when forming the patty. The rest of the ingredients is my secret...
