What is your best/favorite homemade garlic bread recipe?

When I was a kid we used to make garlic bread pretty regularly.... mmmmm garlic bread.

We would take a small double boiler on mediumlow heat and melt a stick of butter. then we would take fresh cloves (about 4) of garlic and squeeze it through the press into the butter. We would also add some garlic powder - maybe a large teaspoon worth. We also had this garlic spread in a jar and we would add a little of that as well.

Stir it up really good and get it to where the butter is starting to bubble. Take some good sourdough english muffins and dip them in to the mixture (inside of course) so that each is well coated. If there is any mixture left in the pan, pour/spoon it evenly over the bread. Place them on a baking tray and put under the broiler for 4-9 minutes depending on how "crispy" and "browned" you like your garlic bread.

Man that was good stuff.

    Greek Garlic Bread


    1 loaf French bread
    8 tablespoons margarine, softened
    1/2 cup mayonnaise
    4 green onions, chopped
    1 (4 ounce) can chopped black olives (or if you prefer a coarser chop, chop about 1/2 large can of whole black olives)
    4 ounces mozzarella cheese, grated
    garlic salt
    seasoning salt

    8-10 servings

    1. Preheat oven to 350.
    2. Slice the loaf of French bread horizontally through the middle so that you have two"boats".
    3. Place bread on jelly roll pan, or in other large casserole dish, cut sides up.
    4. (Or you can place bread in a"boat" made out of foil, for the grill).
    5. Combine all ingredients, including garlic salt and seasoned salt to taste.
    6. (I use liberal amounts).
    7. With spatula, spread each half of the French bread with the mixture.
    8. Bake for 15 minutes.

    The blue cheese dressing in the following one is a wonderful addition!

    No Garlic Garlic Bread

    1 loaf French bread
    1/4 cup butter, melted
    4 tablespoons bleu cheese salad dressing, divided
    1/4 cup parmesan cheese
    1 teaspoon italian seasoning
    ground pepper


    1. Slice bread legnth wise and lay on a cookie sheet.
    2. Drizzle melted butter on both halves and spread with a spoon as best you can (I do a little at a time to ensure I get it spread before it seeps into the bread).
    3. Put 2 tbs dressing on each half and spread out evenly.
    4. Then sprinkle the parmesan on top.
    5. Then sprinkle on the seasoning.
    6. Then the pepper, and you dont want to use too much of this, just a little.
    7. Bake at 375 for ten minutes.
    8. Take out of oven and slice in 10-12 slices.

    Truth is, I often combine the two recipes!
  • A toasted English muffin smeared with Earth Balance (soy margerine) and topped with loads of fine minced garlic!
    • Since I don't have an oven, I make an adapted recipe with fresh garlic butter.

      First, find some good, fresh butter (my landlady, Doña Tomasa, makes homemade butter each week. Yum!) and melt over low heat. Add a ton of finely minced garlic, herbs (basil, marjoram, tarragon, etc) and freshly grated parmesan, then let cool until barely soft and smear over some good toasted bread (whichever you like, I love a good loaf of black olive bread or a nice foccacia) and top with more fresh parmesan and some freshly minced basil!
